Historical Insights
This dish offers a unique twist on traditional pancetta, combining the savory flavor of bacon with the unique texture of heart of palm for a healthier culinary experience.
Ingredients
- Heart of Palm: 1 can (about 14 oz or 400 grams), sliced into thin strips
- Bacon: 4 slices, lean cut preferred
- Lemon: Juice of 1 lemon
- Parsley: A handful, chopped, added at the end for freshness
- Garlic: 4 cloves, halved
- Onion: ½ medium, finely chopped
- Salt: Optional, as the bacon may add enough saltiness
- Black Pepper: Freshly ground, to taste
- Olive Oil: A dash, optional (as an alternative to bacon fat)
Instructions
- Render the Bacon: In a skillet over medium heat, cook the bacon until crispy. Set aside the bacon, and choose whether to use the residual bacon fat or a dash of olive oil for a healthier option.
- Prepare the Base: Using the chosen fat source, sauté the halved garlic cloves and chopped onion in the skillet until they are golden and fragrant.
- Cook Heart of Palm: Add the heart of palm strips to the skillet, cooking until they absorb the flavors and turn slightly golden.
- Cooling Down Phase: Reduce the heat. Crumble the cooked bacon into the skillet along with the chopped parsley, allowing the flavors to combine without further cooking.
- Adjust Seasoning: Taste and adjust the seasoning with salt (if needed) and black pepper.
Optional Adjustments
- Butter: For those who prefer a richer flavor, a dash of butter can be added during the cooling down phase.
- Healthier Fat Option: To reduce the dish's overall fat content, use olive oil instead of bacon fat throughout the cooking process.
