Ingredients

  • Heart of Palm: 1 can (about 14 oz or 400 grams), sliced into thin strips
  • Bacon: 4 slices, lean cut preferred
  • Lemon: Juice of 1 lemon
  • Parsley: A handful, chopped, added at the end for freshness
  • Garlic: 4 cloves, halved
  • Onion: ½ medium, finely chopped
  • Salt: Optional, as the bacon may add enough saltiness
  • Black Pepper: Freshly ground, to taste
  • Olive Oil: A dash, optional (as an alternative to bacon fat)

Instructions

  1. Render the Bacon: In a skillet over medium heat, cook the bacon until crispy. Set aside the bacon, and choose whether to use the residual bacon fat or a dash of olive oil for a healthier option.
  2. Prepare the Base: Using the chosen fat source, sauté the halved garlic cloves and chopped onion in the skillet until they are golden and fragrant.
  3. Cook Heart of Palm: Add the heart of palm strips to the skillet, cooking until they absorb the flavors and turn slightly golden.
  4. Cooling Down Phase: Reduce the heat. Crumble the cooked bacon into the skillet along with the chopped parsley, allowing the flavors to combine without further cooking.
  5. Adjust Seasoning: Taste and adjust the seasoning with salt (if needed) and black pepper.

Optional Adjustments

  • Butter: For those who prefer a richer flavor, a dash of butter can be added during the cooling down phase.
  • Healthier Fat Option: To reduce the dish's overall fat content, use olive oil instead of bacon fat throughout the cooking process.
